I had a few ingredients left over from this past weekend and in pondering as to how to combine them, this is what I came up with. The result was a delicious, flavorful crock pot meal that was perfect for a Monday night.
The ingredients in this crock pot dish are very simple and straightforward.
First thing, chop half a white onion, three cloves of garlic, 1 TB of fresh rosemary and 1 TB of fresh thyme.
Drop those right into your crock pot.
Add 1/4 cup of flour, 1 tsp of Kosher salt and 1/2 tsp of freshly ground black pepper.
On top of the veggies, place 2 large center cut pork chops.
Sprinkle another 1 tsp of Kosher salt and 1/2 tsp of fresh black pepper on top of the pork chops. Add 1/2 cup of water.
Set your crock pot on low for 8 hrs.
The onions and garlic will have melted together and there will be a wonderful onion gravy in the bottom of the pan.
Note: You could stop right here and serve these luscious pork chops with onion gravy spooned over the top. I decided to keep going, really because I was stuck on using up the other ingredients, but feel free to just serve this up with a salad and call it a night!
If you chose to keep going, remove the pork chops from the crock pot and place them on a plate.
To the gravy, add 1/4 cup of half and half, 1/2 cup of frozen green beans (organic if possible) and 2 cans of northern white beans RINSED (organic if possible). Mix everything together, close the lid and let the mixture heat up for a few minutes.
While the beans are heating through, shred your pork.
When the pork is shredded, add it back in to the crock pot and stir it into the beans and vegetables. Taste for seasonings.
Spoon it into a bowl and enjoy!

1/4 cup half and half
1/2 cup frozen green beans (organic, if possible)

In the crock pot insert, add the onions, garlic, rosemary, thyme, flour, 1 tsp salt, and 1/2 tsp pepper.
Place the pork chops on top of the vegetables. Sprinkle the remaining 1 tsp of salt and 1/2 tsp of pepper over the pork. Add 1/2 cup water.
Cook the pork chops in the crock pot on low for 8 hrs.
Remove the pork from the crock pot and set aside on a plate. Add the half and half, green beans, and white beans to the onion gravy and stir all the ingredients together. Cover and allow the vegetables to heat through, about 10 minutes.
Shred the pork and add the pork back into the vegetables. Stir everything together. If necessary, cover and allow the pork and vegetables to heat through for 5 minutes longer. Test for seasonings and serve!
