I had a version of this salad today at brunch and really felt the need to re-create it. It is so light and fresh, especially in the midst of summer when watermelon is in season.
This is the easiest salad in the world.
All the ingredients compliment one another perfectly. I was a little scared to add salt, pepper and olive oil to watermelon, but it works.
I used basil because that is what I had, but feel free to use mint or cilantro! Play around with the flavors and see what happens.
2 cups watermelon, chopped into large chunks
6 oz feta, chopped into large chunks
1 cup basil, julienned, reserve 1/4 cup for serving.
4 tablespoons fresh lemon juice, about the juice of one lemon
3 tablespoons good quality extra virgin olive oil
1 tsp Kosher salt
1/2 tsp freshly ground black pepper.
Add watermelon, feta and 3/4 cup of basil to a large bowl. Squeeze the lemon over the watermelon and drizzle the olive oil. Add the salt and pepper and toss all ingredients together.
Allow the salad to marinate in the fridge for at least 30 minutes, covered. Toss the watermelon in the juices once more and serve with a little extra basil.
