This salad is so fresh and delicious and it pairs perfectly with Chinese Dumplings for a balanced meal.
2 Zucchini, julienned
1 carrot, julienned
2 scallions, thinly sliced
1/2 cup cilantro
1 cup edamame (I used frozen edamame)
1 avocado, cut into medium chunks
1 TB freshly grated ginger
1 TB garlic, finely chopped
2 TB of pine nuts or cashews
1 TB white or black sesame seeds
Pinch of Kosher salt and freshly ground black pepper.
For the dressing:
1 TB peanut butter
1/2 tsp honey
4 TB lime juice, separated (about the juice of 2 limes)
1 TB dark or 2 TB light sesame oil
2 TB extra virgin olive oil
1 tsp salt
1/2 tsp pepper
If you have a julienne machine thing-y, use that to julienne your zucchinis and carrot. If you don’t, like me, use a mandolin or sharp knife to julienne your zucchinis and carrots. Here’s how I did it…
First, cut the ends off the zucchini.
Then slice the zucchini.
Using a sharp knife, slice the zucchini longways to create julienne strips.
Do the exact same thing with the carrot.
Add both to a large bowl.
This recipe is much, much more flavorful if you use fresh ginger. This is not the time for dried, ground ginger.
Use a microplane or zester to finely grate your ginger root.
Add the ginger to the zucchini and carrot along with the cilantro, scallion, edamame, garlic, pine nuts, sesame seeds, and a good pinch of the salt and pepper.
Edamame (soy beans) is sold is many different forms, but I use frozen edamame that I find in the freezer section near the vegetables at my local grocery store.
Don’t even worry about defrosting them. By the time the salad is done, they will be defrosted.
To make the dressing:
In a measuring cup, add the peanut butter, honey, sesame oil, 2 TB of lime juice (about 1 lime), and the salt and pepper.
Whisk to combine.
Mix the dressing into the salad. You will notice that it is very thick. Once you have coated the salad as best as possible. Add the 1/4 of olive oil and the other 2 TB of lime juice (about 1 lime). TASTE the salad to make sure it doesn’t need any extra salt or pepper.
Lastly, add the chopped avocado.
Gently mix in the avocado.
Serve with an extra sprinkling of sesame seeds.
Serve this with some delicious Chinese dumplings.
