Grilled Carrots and Zucchini!

If this doesn’t scream summer I don’t know what does. The Cheese and I had this tonight with Mediterranean Marinated Chicken. While I love roasting veggies, grilled carrots and zucchini develop this charred, robust flavor on the grill. The Cheese was saying that they almost have a meaty element to them. Anyways, these are so easy, and you just throw them on the grill with whatever meat, fish, or other veggies you are cooking.

Ingredients:

1 bunch of carrots – organic if possible (Hint: Veggies that have a really thin skin, like carrots, peppers, and celery, end up absorbing more pesticides. So, either buy organic, or really wash your vegetables well.)

1 zucchini – organic if possible

Kosher salt

Cracked pepper

Extra Virgin Olive Oil

Directions:

Start by washing and peeling your carrots.

With a sharp knife, split the carrots in half lengthwise.

Next, wash your zucchini and then cut both ends off.

Using a mandolin, slice the zucchini into long, flat strips that are about 1/8 of an inch thick.

If you don’t have a mandolin, cut the zucchini in half crosswise.

Then cut each half into strips. They won’t be as long, but they work just fine.

Put the carrots and the zucchini onto a sheet pan.

Drizzle with olive oil.

Then sprinkle them generously with salt and pepper, keeping your taste preferences in mind.

Heat your grill or grill pan to medium high heat.

Starting with the carrots, place them rounded side down on the grill.

Close the lid and let the cook for about 10 – 12 minutes. Then flip them.

Let the carrots cook for about another 10  – 12 minutes.

When the carrots have about 10 or so minutes left, add the zucchini to the grill. If you have an upper grilling shelf, I would suggest putting them on that, because the are delicate and burn easily.

Let them cook on one side for about 3 – 5 minutes and then turn them.

Allow them to cook for another 3 – 5 minutes or so, watching them carefully.

Serve these delicious veggies with chicken, fish, steak, or anything else your little heart may desire!!
