Chicken Sausage

This dish is a major crowd pleaser. It is really quick, healthy and easy to make and is a good recipe for a dinner party. Enjoy!

Ingredients:

3 tablespoons of olive oil

10 chicken sausages (2 packages)

5 cloves of garlic, peeled and chopped

2 pints of cherry tomatoes, halved

3 dry chili peppers

2 cans of cannellini beans, RINSED AND DRAINED – rinse those puppies really well.

3 bay leaves

chopped parsley for decor (if you want to make it look purty)

Parmesan cheese for sprinkling.

Directions: 

Heat a large dutch oven or deep saute pan to medium high heat. Add one tablespoon of the olive oil.

When the oil is hot add the sausages five at a time and brown on both sides. Set aside on a plate.

Turn the heat down to medium. Add the last 2 tablespoons of olive oil and add the garlic. Cook the garlic for 30 seconds to a minute and then add the cherry tomatoes, the 3 chili peppers, and the bay leaves.

Sprinkle 1 teaspoon of salt and 1/2 a teaspoon of pepper to the tomatoes. Close the lid and let simmer for 10 minutes until the tomatoes are broken down.

Remove the lid and add the sausages and any juice on the plate to the tomatoes.

Add the rinsed and drained cannellini beans.

Stir everything and let cook uncovered for another ten minutes.

Place two sausages on a plate and spoon the white beans and tomatoes over the top. Sprinkle with some parsley and Parmesan cheese.
