Slaw!

Slaw:

1/4 of a small head of cabbage (red or white), thinly sliced

1 carrot, grated

1/4 cup of cilantro, chopped

1 – 2 limes

Olive oil

Salt and pepper

Toss the cabbage, carrots and cilantro together in a bowl.

Squeeze the juice of one lime over the top with a couple glugs of olive oil (about a 1/4 cup) and 1 tsp of salt and 1/2 tsp of pepper. Keep mixing and tasting until you get the flavor you want. I always end up adding at least another good squeeze of lime. Spoon the slaw over chicken tacos, fish, or just add some arugula and make a salad. Perfection!
