I LOVE arugula salads! They are so easily put together and make for a delicious accompaniment to any meal. They are also a great way to get your greens in during the week.

The big thing about salad is the dressing. Dressing’s can be seriously scary! Even the refrigerated ones that look really fancy normally have a lot of really, I mean really bad ingredients in them. I find that it is so much better to just stick with a lemon and olive oil dressing. If you like, you can even add a small scoop of mayo or greek yogurt to make it tangy and creamy. I do that all the time!

Arugula salad:

Throw arugula in a bowl. (Half of one of those bags or boxes is normally good for two people).


I will normally add avocado and toasted pine nuts. But you can literally add whatever you want to.

Ok so below is a recipe for a lemon vinaigrette that I will make, keep in a mason jar, put in the fridge, and just shake it up whenever I need to use some. HOWEVER, I’m not gonna lie, most nights I just squeeze half a lemon with a few glugs of olive oil, salt and pepper and just toss.

Lemon Vinaigrette

Juice of 2 lemons (about 1/4 cup)

1/4 cup olive oil

1 tsp of good dijon mustard such as Grey Poupon

1 tsp salt

1/2 tsp pepper (or more if you like it. I do. I do.)

Put ingredients into a mason jar, put the lid on and shake it till you make it.

Store the jar in the fridge and use it as you go.
